Natural process means leaving the fruit on the seed while it dries. This allows the nutrients and sugars from the skin go into the bean, giving it sweet and fruity flavor. It is the traditional processing method originating from Ethiopia, and according to many it can bring the most scrumptious coffees! Not many producers experiment with natural in Central America, which makes De la Gente’s natural processed by Froilan, Manuel and Gabriel even more distinct.
